I don’t think I could get by without my slow cooker. This trusty kitchen necessity has saved me from those last-minute harried meals, made some amazing applesauce (link) and stood in for me when I wasn’t home to cook dinner.
It’s the busy cook’s best friend.
Of course it’s great for soups, stews and chili dishes, but it’s also great for preparing some fancier fare as well.
My personal favorite is a succulent, tender, slow-cooked pork loin. It’s close enough to barbecue for this Southern gal, but with a better cut of meat, it just becomes melt-in-your mouth goodness.
I do not exaggerate when I say that 7-8 hours after you put this in the pot, it’s practically magical.
But before you throw everything in the slow cooker, let’s talk sauce. One of the key ingredients in the recipe is barbecue sauce. Use your favorite brand, of course, but it’s very important to take note that this recipe has a kick. And that kick is some extremely hot peppers.
You can substitute the spicy sauce with a few fresh chilies, or add your adjusted amount of hot sauce.
Slow-Cooker Pork Loin
Sear your pork loin on all sides, just until barely brown.
Add to your slow cooker with all other ingredients and turn on low for 7-8 hours.
